Anticipating Fall! My Crazy Easy Pumpkin Muffin Recipe For Under $2!!

I don't know about you guys, but I'm not the best at cooking. My husband loves to cook, so he does most of it. Baking is more of my thing, so I spend a lot of time on pinterest looking up yummy treats haha. My family loves these muffins. I like to make these for family get togethers, or if I'm having a last minute Sunday football watch party. I'm all about deals also so I buy the ingredients at Aldi grocery store, and it's about $2. Even if you're not good at baking, this is something you have to try. Especially if you love pumpkin as much as me! Now when I say it's crazy easy, I mean TWO ingredients. No eggs, no water, no oil.

All you're going to need is:
                     *yellow cake mix $0.99 and 1 can of pumpkin puree $0.89 (I bought both at aldi)
                                                      Pre-heat your oven to 350 degrees

Step 1. Put ONLY cake mix and puree in a bowl and mix. You can do it by hand but the pumpkin puree is kind of thick so it will take longer. I prefer using a mixer. 

Step 2. Grab a muffin tin or whatever you plan to cook it in. (I've tried it in a cake pan a few times and it turned out just as good.) I like using paper baking cups for the muffins. It's cute and it makes for easier clean up

Step 3. Put them in the oven for 20 - 25 minutes. You'll want them to brown a little on the top. To ensure they're cooked all the way through, stick a tooth pick in the center and it should come out clean when you pull it out. I like to let them cool for about an hour before I take them out of the pan.

And you're done! I personally like them this way, but feel free to add powdered sugar on top, or add cream cheese icing if you'd like. I try to keep them as low calorie as possible haha.

Hello World!!

HHello my name is Roxanne! I’ve started this blog in hopes to have more adult interaction, haha. I’m 27 years old, a wife, and a mother of two children, one of which has autism. My son Liam is 3 years old. He has “typical” (whatever that means) nonverbal autism, and also has a global developmental delay. My daughter is 8 years old and loves everything girly. My husband Joey works for a life insurance company in a pretty normal Monday through Friday job. I’m a stay at home mom. It’s something we didn’t really plan, but you can’t really plan for autism. It plans your life for you. Childcare is pretty impossible to trust when you have a child with special needs. I love everything fashion, makeup, and health related. Two years ago I started my weight loss journey. I worked really hard at the gym and dieting, and lost 50 pounds. I’m not a professional by any means, haha. I’ve never liked working out in my life, but I’ve found what works for me. I have my lazy times, don’t get me wrong. With any weight loss journey, you have your ups and downs for sure. Since its summer I haven’t exactly been an avid gym goer, but school starts in two days so I’ll be back at it soon! With this blog I hope to inspire, comfort, and give people a peak of what my family life is like. Being an autism mommy isn’t easy all the time but it’s one of the most rewarding things I’ve ever been through. You need to have hobbies, and make time for yourself and your marriage <3 I look forward to chatting and getting to know new people!!
